Carrots? This is not a new or a trendy vegetable! How does it rate vegetable of the week?

Because these little snack packs are replacing my daily snack pack of cookies. Carrots are sweet and versatile, making their way into everything from stir fries to cake, but they’re perfect for that mindless stress-induced afternoon snack.

They’re also the poster veggie for beta-carotene, they’re good for our eyes and skin and livers, and they taste extra nice roasted.
