There are some foods involving the Evil 6 that I’ve not yet given up. Pizza is one. However, I am now making my own healthier pizza.

This is a simple crust made with King Arthur’s Pizza Flour:

  • 1 cup warm water
  • 2 T olive oil
  • 2 cups flour
  • 2 T yeast

I’ve tried lots of flours, including whole wheat, and this is the most successful, though I often will use whole wheat. Sourdough bread mix is good, too. This flour gives you the crisp/light/chewy effect and an excellent flavor. Whatever you use, divide it into  parts which make the right amount of crust for your household, shape the crust as thick or thin as you like, and bake for 10 minutes.

Put the extras in plastic bags in the freezer and top yours with sauce and cheese and toppings. I use King Arthur’s Pizza Seasoning and Pastorelli pizza sauce, which comes in a small can — the right amount for the crust recipe above. In this case, I also used pepperoni, but sometimes I use vegetables. Then bake for another ten minutes. Yum.

Obviously, whole wheat flour and vegetables are more nutritious than Pizza Flour and pepperoni, but even this unhealthy version is better than takeaway, which contains Tomato Paste, Distilled Vinegar, Honey Solids, Brown Sugar, Salt, Molasses, Sodium Diacetate, Wheat Starch, Citric Acid, Disodium Inosinate & Guanylate, Spice, Garlic Powder, Modified Corn Starch, Onion Powder, Preservatives (Potassium Sorbate, Sodium Benzoate), Natural And Artificial Flavor (Including Natural Smoke Flavor), and twice the calories.
