#1 son and his crew came over for a meal prep session. Here’s what we made:

  • Moroccan Meatballs  using a paleo recipe with fresh mint, but the one linked might be better, though I’d still use mint. Home fries and roasted carrots and butternut squash went with the meatballs for dinner.
  • Three kinds of grilled chicken: Garlic Lime with Avocado Salsa, Orange Pepper, and Honey Mustard
  • Country Captain
  • Shepherd’s Pie

We also put down the deposit for the Air B&B in Colorado in August and planned this weekend’s trip to KC and Memorial Day weekend at #1 daughter’s.
